When I discovered the word, ‘blog’, I didn’t know what it meant, but when it was explained to me that I could share information by ‘blogging’ I became thrilled.


The first thing that came to mind that I would like to share is my Canadian Pancake recipe. I know it sounds corny, but when I make my pancakes I feel happy and hope that when sharing my pancakes with others, they will feel happy too.


So here is the first official entry for my ‘blog’, my pancake recipe…

I hope you get the opportunity to make a batch of pancakes and share them with family and friends.


(For those Canucks reading this, yes, this is from the $2.95 Purity Cookbook with a few alterations).

All measurements are in imperial…apologies to those who are on metric. Conversions can be found online, simply Google the word ‘conversions’. J

Sift together in a glass bowl:

1 ½ Cups all purpose flour
1-2 Tablespoons white sugar
3 Teaspoons baking powder
½ Teaspoon salt

Combine in a glass bowl:

1 ¾ Cups milk
2 Tablespoons vegetable oil or melted shortening
1 Beaten egg


Blend the liquid ingredients into the dry ingredients gradually and beat until almost smooth.

Preheat your griddle or heavy frying pan on medium heat (drops of water will dance across it when ready). Grease lightly with butter.


Allow approx. ¼ Cup of batter for each pancake. Pour on preheated pan. Turn when bubbles break on the surface and edges lose their gloss. Flip and cook until golden brown.


If batter thickens add more milk.


Serve hot with butter and Canadian maple syrup and/or with fresh berries, banana, vanilla yoghurt and nuts.

Makes approx. 12 pancakes.
